How to cook Sweet Pickles
7 pounds small cucumbers
2 gallons water
2 cups pickling lime
2 quarts crushed ice
8 cups white vinegar
8 cups sugar
1 tbs salt
2 tsp pickling spices
Wash cucumbers and slice.
Combine cucumber slices, 2 gallons water, and pickling lime in a large crockery bowl and soak for 12 hours.
Drain cucumber slices and rinse in cold water, repeat three times.
Pace crushed ice over cucumbers, cover and let sit for 4 hours. Drain well.
Heat vinegar, sugar, salt, and pickling spices in a large saucepan, stirring constantly, until mixture comes to a boil and sugar dissolves.
pour syrup mixture over cucumbers and let stand 5-6 hours or overnight.
Bring cucumber and syrup mixture to a boil.
Reduce heat and simmer for 35 minutes.
Pack into hot sterilized jars, leaving 1/2 inch space.
Remove air bubbles and wipe jar rims.
Cover with metal lids and process in boiling-water bath for 10 minutes.
