South Your Mouth had another recipe that I just had to share. I would make mine with hominy so that's what I replaced with the corn but you could make it either way.
Corn Casserole – Southern Comfort
2 cans white hominy
1/4 cup flour
2 tbs sugar
1/4 tsp cayenne pepper (optional or use less)
2 tbs butter, melted
8 oz. cheddar cheese, shredded
4 pieces bacon cooked and crumbled
2 tbs chopped chives (or parsley or cilantro)
Blend eggs, flour, sugar, cayenne and butter.
Add hominy, cheese and bacon.
Pour mixture into a greased shallow baking dish and sprinkle top with cheese.
Bake, uncovered, at 325 degrees for 30-35 minutes or until golden brown and bubbly around edges.
I assume you drain the hominy/corn?
