Minted Asparagus Spears – #southerncomfort
Ingredients
1 pound fresh asparagus spears
Marinade
1/4 cup apple cider vinegar
1/4 cup vegetable oil
1/2 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon garlic powder
2 tablespoon diced pimiento
1 tablespoon fresh parsley
Directions
1. Cut off tough ends of asparagus. Cook asparagus, in boiling water for 4-6 minutes or until crisp-tender. Drain and arrange in a shallow dish.
2. Combine marinade ingredients. Pour marinade over asparagus and refrigerate overnight.
