Minted Sugar Snap Peas – #southerncomfort

1/2 pound fresh sugar snap peas
2 tablespoons butter
1 large red bell pepper
3 tablespoons green onions
1 tablespoon fresh mint
1/4 teaspoon salt

1. Wash the sugar snap peas and trim ends and remove strings.

2. Melt butter. Add peas and rest of ingredients. Cover and cook over medium-high heat for 6-8 minutes or until pods are crisp-tender.
