How to cook Southern Spoon Bread
2 cups milk
3 Tbs butter
1 cup cornmeal
3/4 cup water
3 eggs, separated
Combine milk, butter, salt in a saucepan and bring to a boil.
Gradually add cornmeal, stirring constantly with a wire whisk. Remove from heat. Gradually add water, stirring well. Pour into a bowl.
Beat egg yolks until think and lemon-colored. Stir 1/4 of the hot mixture into the yolks to temper it. Beat egg whites until stiff peaks form. Fold in the rest of the mixture with the egg whites.
Pour mixture into a greased 2 quart casserole. Bake at 375 degrees, uncovered for 30 minutes.
How to cook Turnip Greens with Turnip Roots
5 pounds young and tender fresh turnip greens and roots
1/2 pound salt pork cut into pieces
2 cups water
1/2 tsp salt
1 tsp sugar
hot pepper sauce
Wash and drain the turnips very well.
Cut greens into bite-sized pieces.
Peel and chop turnip roots.
Rinse salt pork and combine with water and salt in a large Dutch Oven.
Bring to a boil then cover and reduce to a simmer for 30 minutes.
Stir in turnip greens; cover and cook for 20 minutes.
Add turnip roots and sugar, cover and cook for 15-20 minutes or until the greens and roots are done.
Remove and discard salt pork.
Add hot sauce to taste
How to cook Southern Cabbage
2 slices bacon cut into pieces
1/4 cup onion
3/4 cup green bell pepper
1 can whole tomatoes undrained and chopped
1 head cabbage
1/4 cup cider vinegar
1/2 tsp salt
1/2 tsp pepper
3 dashes hot sauce
Cook bacon in a Dutch Oven until crisp.
Add onion and green pepper and saute until tender.
Add tomatoes, cabbage, vinegar, salt, pepper, and hot sauce.
Cover and bring to a boil then reduce heat and simmer until cabbage is tender.
How to cook apple butter
12 coking apples (peeled, cored, and chopped)
1 1/2 quarts apple cider
1/3 cup red cinnamon candies
1 1/3 cup sugar
1 Tbs cider vinegar
1 1/2 tsp cinnamon
1/2 tsp cloves
Combine apples, cider, and candies in a Dutch Oven and bring to a boil.
Reduce heat, cover, and simmer for one hour or until apples are tender.
Drain apples and mash.
Return mashed apples to the Dutch Oven and add sugar, vinegar, cinnamon, and cloves.
Cook for another 45-50 minutes until thickened.
Remove from heat and ladle apple butter into hot sterilized jars.
Process in a boiling-water bath for ten minutes.
How to cook sweet corn custard
2 cups fresh cut corn
3 eggs, beaten
3/4 cup shredded cheese
1/4 cup flour
4 tsp sugar
1/2 tsp salt
1/8 tsp black pepper
1/8 tsp nutmeg
2 cups half and half
2 tbs unsalted butter or margarine
Combine corn, eggs, and cheese in a large bowl, stirring well.
Combine flour, sugar, salt, pepper, and nutmeg.
Mix everything together and pour into a greased shallow baking dish. Place inside a larger dish and add hot water up to 1 inch.
Bake at 350 degrees uncovered for 1 hour.
How to cook baked beans
2 cans of pork and beans
3/4 cup firmly packed brown sugar
1/2 cup chopped onion
1/2 cup ketchup
1/4 cup chopped green pepper
2 tsp prepared mustard
4 slices of bacon
Combine all ingredients, except bacon. Stir well.
Spoon into a lightly greased 2 quart baking dish. Arrange bacon slices and bake at 350 degrees for 1 hour.
