Ingredients for BBQ Chicken, Pork, or Beef
2 pounds warm shredded barbecued chicken without sauce*
1/3 cup red barbecue sauce
Red barbecue sauce to taste
30 plum tomato slices (about 5 tomatoes)
Toppings: red onion slices, cracked pepper
Directions
1. Toss chicken in 1/3 cup red barbecue sauce.
2. Spoon barbecued chicken mixture evenly onto Cornbread Griddle Cakes. Drizzle each with red barbecue sauce to taste. Top each with 1 tomato slice. Spoon White Barbecue Sauce Slaw onto each tomato slice. Serve with White Barbecue Sauce and desired toppings.
Ingredients for Cornbread Griddle Cakes
2 cups yellow self-rising cornmeal
1 cup all-purpose flour
1 1/2 cups milk
1/3 cup butter, melted
2 large eggs, lightly beaten
1 tablespoon sugar
1/4 teaspoon ground red pepper
Directions for Cornbread Griddle Cakes
1. Stir together all ingredients just until moistened. Pour 2 Tbsp. batter for each cake onto a hot, greased griddle or large nonstick skillet. Cook cakes 2 to 3 minutes or until tops are covered with bubbles and edges look dry and cooked; turn and cook other side (about 2 minutes).
Ingredients for White BBQ Sauce Slaw
1 (16-oz.) package shredded coleslaw mix with carrots
1/2 cup White Barbecue Sauce
1/4 cup chopped red onion
1/2 teaspoon salt
Directions for White BBQ Sauce Slaw
Combine all ingredients. Toss gently; cover and chill 1 hour.
Ingredients for White BBQ Sauce
1 1/4 cups mayonnaise
1/4 cup horseradish
3 tablespoons cider vinegar
1 tablespoon lemon juice
1 teaspoon coarsely ground pepper
1/4 teaspoon salt
Directions for White BBQ Sauce
1. Stir together all ingredients in a small bowl. Cover and chill at least 1 hour until ready to serve.
White Barbecue Sauce Slaw: Combine 1 (16-oz.) package shredded coleslaw mix with carrots, 1/2 cup White Barbecue Sauce, 1/4 cup chopped red onion, and 1/2 tsp. salt. Toss gently; cover and chill 1 hour. Makes 6 to 8 servings.
